The Story of Pistachios
The word pistacia, which is the scientific Latin name for pistachios and whose derivatives are used in many languages, came to this language from Greek and is originally derived from the Middle Persian root “pistak”.
Pistachios are an edible, shelled fruit from the pistachio family. They grow from trees with oily, thin shells. Known historically as “green gold,” “king of fruits,” “golden tree,” and “king fruit,” the fruit, according to the earliest sources, was first cultivated by the Eti people in Southern Anatolia.
The reason why it is called Antep pistachio is that the first pistachio enterprises in Türkiye were established in Gaziantep and most of the production was done here and distributed to the world from there.
This fruit is primarily used in the dessert industry. Rich in vitamins, minerals, and proteins, this exquisite fruit offers numerous benefits for the digestive system, body resistance, and heart and diabetes health.
Pistachios, like olives, are harvested in three distinct periods: early, mid-season, and late. Early-season pistachios are called “gray pistachios,” mid-season pistachios are called “meverdi pistachios,” and late-season pistachios are called “red pistachios.” While each variety has varying uses, the most important characteristic that distinguishes pistachios from other pistachios is their characteristic aroma, unique to the region.

As Dededen, we take care to process our region’s olives and pistachios in the most correct way by combining the spiritual heritage that Atatürk left us with ‘science and reason’.
